We’re always concocting new mignonette recipes for Duxbury Raw Bar events. Enjoy this spring season winner recipe “Springtime Oyster Mignonette”:
SPRINGTIME OYSTER MIGNIONETTE
Ingredients: One Small Shallot, One Fresh Strawberry, Champagne Vinegar, Rice Vinegar, Orange Juice, Grains of Paradise (or substitute freshly ground black pepper), Lemon Zest.
1. Finely mince the shallot
2. Chop half the strawberry for texture, press the other half through a garlic press.
3. Add 1/4 cup Champagne Vinegar
4. Add 1/8 cup Rice Vinegar
5. Add 2 Tbsp. Fresh Orange Juice
6. Freshly ground Grains of Paradise (or Black Pepper)
7. Finish with lemon zest
Serve with three dozen oysters.
